Fresh kanpachi (amberback) fillet from Kyushu, Japan. Farm raised in pristine conditions and handled with extreme care by experienced Japanese farmers. Japanese Kanpachi (Amerberjack) fillet is a leaner, milder tasting version of hamachi (yellowtail). Wild Kanpachi is best during the summer, but many prefer farmed Kanpachi due to the distinct price differences. It has a sweet taste, and the meat is firm with a little bit of fat, but not as much as hamachi. Wild Kanpachi can grow to over 100 pounds and 6 feet in length, but those are rare occasions.
Perfect sushi grade fish for sashimi & sushi.
